Grilled Sirloin Steak With Harvest Vegetable Salad

Tender steak marinated and grilled along with fresh eggplant, asparagus, sweet onion and Portobello mushrooms. Served warm or cold, this is a great dish to serve as a main dish or surrounded with side dishes such as hot orzo, and garlic pita toast.

Extra virgin olive oil, red wine vinegar, onion and garlic powders, dried oregano and basil combine to make a powerful marinade imparting wonderful Mediterranean style flavors. Steak is grilled over direct heat to create grill marks and quickly sear in flavor. The fresh sliced vegetables are grilled and removed as they finish cooking. Plate the steak and vegetables over torn Romaine lettuce pieces.

Grilled Sirloin Steak with Harvest Vegetable Salad

Ingredients:

1 cup Extra Virgin Olive Oil

2/3 cup Red Wine Vinegar

2 teaspoons Onion Powder

2 teaspoons Garlic Powder

2 tablespoons Dried Oregano

2 tablespoons Dried Basil

Coarse Salt, to taste

Fresh Ground Black Pepper, to taste

2 pounds 1-inch thick cut Beef Top Sirloin Steak

2 pounds of Mixed Vegetables:

Asparagus Spears

Eggplant cut in 1/4-inch lengthwise slices

Zucchini halved lengthwise

Sweet Onions, quartered

Red Bell Pepper, seeded and cut in strips

Beefsteak Tomato, sliced thin

Portobello Mushroom Caps

20 large Romaine Lettuce Leaves

Preparation:

1. Add the extra virgin olive oil, red wine vinegar, onion powder, garlic powder to a large bowl. Whisk briskly to combine.

2. Add half the marinade to a resealable plastic bag or baking dish. Reserve the other half of the marinade in the refrigerator for basting later.

3. Toss the sirloin steak in the marinade to coat. Seal the bag or cover the baking dish with plastic wrap and refrigerate from 30 minutes to 1 hour.

4. Preheat the grill to medium high heat.

5. Remove the steak from the marinade and discard the marinade.

6. Grill the sirloin steak and vegetables, turning once. Baste with reserved marinade after turning.

7. Remove vegetables from the grill as the they finish cooking, remove the steak when it reaches the desired doneness.

8. Allow the steak to rest about 5 minutes before carving.

9. Arrange the steak pieces and mixed vegetables in romaine lettuce leaves.

10. Serve salad warm or cold.

Rotisserie Chicken Pasta Salad With Red Apple and Fresh Watercress

Slow roasted chicken is combined with red delicious apple and fresh watercress. The chicken salad mixture is paired with Cappellini pasta and tossed with an apple and honey mustard vinaigrette. The dish is similar in style to a Waldorf salad. Pasta salad is summer salad, but this recipe is perfect year round. The chicken pasta salad is a perfect starter, side dish or entree. A pretty salad, it can be elegantly served on individual leaf lettuce.

Rotisserie chicken has become a very popular item in grocery stores and specialty food stores. The chicken is slow cooked over low heat until it is tender and juicy. Individually packaged, the roasted birds can be purchased warm from the oven, or chilled for heating up later. Pre-cooked chicken is a real time saver. An oven or barbecue roasted whole chicken is a perfect substitute, as is your favorite type of red or green apple.

Rotisserie Chicken Pasta Salad with Red Apple and Fresh Watercress

Ingredients:

1 Rotisserie Chicken

1 Red Delicious Apple, peeled if desired, and diced

1 bunch Fresh Watercress

8 ounces Cappellini Pasta, broken into thirds

Dressing:

1/3 cup Apple Cider Vinegar

2 tablespoons Fresh Honey

1 tablespoon Honey Dijon Mustard

1 teaspoon chopped Fresh Thyme

1/8 teaspoon Coarse Salt

1/8 teaspoon Fresh Ground Black Pepper

2/3 cup Extra Virgin Olive Oil

Garnish:

3/4 cup Glazed Sesame Walnuts

Preparation:

Dressing:

1. Add apple cider vinegar, fresh honey, honey Dijon mustard, chopped fresh thyme, coarse salt and fresh ground black pepper to small mixing bowl.

2. Gradually whisk in extra virgin olive oil. Set aside.

Pasta Salad:

1. Shred the rotisserie chicken into a large serving bowl.

2. Add the diced red apple and fresh watercress. Toss to combine.

3. Cook pasta al dente. Drain pasta into colander, rinse with cold water.

4. Add pasta to chicken mixture.

5. Add glazed sesame walnuts to pasta salad.

6. Toss salad with dressing.

Soup and Salad of Wine and Onion Bisque & Spring Mix Salad with Worcestershire-Parsley Dressing

Soup and Salad is a common summer lunch menu. Try something new serve soup and salad for as a winter lunch or brunch. Here is a bisque and salad combination that make a good choice for a winter soup and salad.

Wine and Onion Bisque

5 Cups Vegetable Stock

2 Cups Dry White Wine

1 Tbs Dill weed

1 tsp Dried Savory

2 Carrots, peeled and chopped

4 Cups Onions, pealed and chopped

Salt to taste

Pepper to taste

In a large stock pot bring all ingredients to a boil. Reduce heat and simmer for 2 hours.

Strain the vegetables and place them in a food processor or blender. Blend the vegetables until pureed. Return the broth to the stock pot. Add the pureed vegetables back into the broth and stir well. Salt and pepper to taste.

Salad

Spring Mix Salad with Worcestershire-Parsley Dressing

Dressing

¼ Cup Mayonnaise

3 Tbs White Vinegar

1 Green Onion, chopped

1 Clove Garlic, minced

1 tsp Sugar

½ tsp Salt

1 tsp Worcestershire Sauce

½ tsp Hot Sauce

½ Cup Vegetable Oil

1 Cup Fresh Parsley, finely chopped

Blend all the ingredients in a blender or whisk vigorously for two minutes. When well blended chill for 1 hour.

Greens

Choose a spring salad mix, or tender fresh greens of your liking. I enjoy a simple spring mix.

My inspiration for making this salad came after eating a very similar dish at a popular restaurant that I frequently visit. Actually, this is something my Wife and I like to do every once in a while. After we eat a dish that we are particularly fond of, we like to go home and try and re-create the recipe without knowing the ingredients. Try it… It’s a fun way to see just how sensitive those taste buds really are….

FARMERS MARKET

I am fortunate enough to have a wonderful farmers market not too far from my home. There is just something special about shopping for produce in a farmers market. The variety and quality of the produce found in my local farmers market is far superior to the boring old supermarket. I know I am getting as close to organic as possible when I shop there, so if you have one near you, I highly recommend you visit and see what they have to offer. Usually the folks there are very helpful and knowledgeable about their products so don’t be afraid to ask questions.

INGREDIENTS

Here are the ingredients you will need to make this wonderful :

- 1 Pound of Chicken Cutlets Grilled and Cut Into Strips - I like to use the thin sliced chicken as it cooks really fast and is easy to cut into strips.

- Southwestern Spice Rub:

2 tablespoons chili powder

2 tablespoons paprika

1 tablespoon garlic powder

1 tablespoon salt

2 teaspoons ground cumin

1 teaspoon cayenne pepper

1 teaspoon crushed red pepper flakes

1 teaspoon black pepper

1 teaspoon dried oregano

- 8 Ounces of Mixed Salad Greens - I like to use a mix of Baby Romaine, Radicchio and Tango. If you can’t find fresh greens, I recommend buying a bag of Fresh Express brand mixed salad greens. I have sampled a handful of salad brands and Fresh Express is by far the best in my opinion. The vegetable are always fresh, crisp and delicious. Everything is pre-washed and there are no preservatives.

2 Ripe Avocados Cut Into Small Chunks - It is very important that you choose ripened avocados. When looking for ripe avocados, do not choose them based on color. The best way to determine if they are ripe is by the squeeze test. Ripe avocados will have a firm flesh but will give slightly when squeezed. Unripened avocados are hard and will not give. You should be able to tell the difference. It may take a bit of practice though. If you are unsure, ask for help. A ripe avocado should slice like butter.

1 Large Green Bell Pepper Cut Into Squares

2 Ears of Roasted Corn (Instructions Below)

Half of a Red Onion Sliced

A Healthy Bunch of Fresh Cilantro Chopped

1/2 Cup of Shredded Cheddar Cheese

Ranch Dressing

Step 1 - Soak the Corn, husks and all, in cold water for 30 minutes.

Step 2 - While corn is soaking, prepare the chicken cutlets. Lightly coat the chicken with olive oil and sprinkle some southwestern spice rub on both sides. Rub the spices into the chicken. Refrigerate and allow the chicken to marinate while the corn is soaking.

Step 3 - After corn is done soaking, preheat the oven to 350 degrees fahrenheit. Place corn directly on oven rack and roast for approximately 30 minutes or until the corn is relatively soft. Remove from oven and let the corn cool.

Step 4 - Preheat indoor or outdoor grill. Get the grill nice and hot. Grill chicken cutlets for about 2 minutes on each side, or until done. Remove from grill and allow to cool.

Step 5 - While the chicken and corn is cooling, add the remaining ingredients into a large bowl.

Step 6 - Remove corn from cob. Hold corn upright over a cutting board. Using a knife, gently cut the corn from the cob in a downward motion. Be careful!

Step 7 - Slice the chicken into thin strips.

Step 8 - Add the corn and chicken to the bowl with the rest of the ingredients.

Step 9 - Add the ranch dressing and toss the salad. The amount of ranch dressing you add is really up to you. It depends on your personal preference. I like to add about 1/4 cup.

Your done! Serve and enjoy!

Two Fantastic Dishes You Can Cook Using Beef

So many times we only think of turkey, chicken and pork when we are trying to make low cost and nutritious meals, but if we are honest, most of us still crave the flavour that beef provides.

Many of us seem to get stumped on how to cook the beef, we rarely stray from the normal things, meat loaf, burgers, roast beef, tacos and burritos.

But wait, have you ever thought about making a salad with beef? There are a surprising number of wonderful recipes available that you can do with beef.

Here are a couple that have been created recently that your whole family are sure to enjoy.

Spring Beef Salad

You will need:
1 pound of ground beef
1 head of leaf green lettuce
1 head of red leaf lettuce
1/4 pound of fresh spinach
1-3 green onions
1-2 carrots
1-2 stalks of celery
1 tablespoon of fish oil
1/2 teaspoon of ginger
1/2 teaspoon soy sauce
1/2 teaspoon garlic powder
1/4 teaspoon salt
1/4 teaspoon ground black pepper
1/4 cup rice wine vinegar
1/4 cup water
1 teaspoon parsely
1 teaspoon tarragon
1 teaspoon of reserved green onion

To do: In a pan, brown your ground beef, while you are browning the beef add in, fish oil, ginger, soy sauce, garlic powder, salt and pepper.

In a large bowl, rip up your lettuce leaves and spinach. Chop up carrots and celery to your size liking. Then chop up the green onions into small pieces reserving 1 teaspoon for your dressing.

In a small bowl, mix together rice wine vinegar, water, tarragon, parsely and reserved green onion, set in the fridge to chill for approximately 15 minutes.

When the ground beef is done, drain off any fat that may have come out of the beef, now put into the bowl with your salad greens. Mix together. Take the dressing you created and pour all over the top of your salad, toss some more.

Your salad is ready to serve. This is a great spring or summer salad.

Beef vegetable soup with barley

This is a nice hearty soup that is great to eat any time. You could even set this up to cook in your slow cooker for the day.

You will need:
1 pound of ground beef
1 cup chopped carrots
1 cup chopped celery
1 cup chopped yellow onion
1 cup peas
1 cup corn
1 cup lima beans
1 cup chopped potatoes
1 1/2 cup barley
2 cups beef stock
4-6 cups water
1 teaspoon garlic powder
1 teaspoon basil
1 teaspoon oregano
1 teaspoon salt
1 teaspoon black pepper

To do:
In a large pan, begin by browning your ground beef, sprinkle a small amount of salt and pepper while meat is cooking. When the meat is browning, add in the onion, let cook for a minute or two, this will allow some of the oils to sweat from the onion and provide additional flavor to the beef and the soup. Now toss in remaining vegetables, allow to good mixing constantly for about 10 minutes, this will help the softening process on the vegetables and also release additional flavors for your soup. Add in the stock, water and spices, cover with a lid let cook on medium heat for about an hour, checking occasionally to make sure it doesn’t boil over. Then lower to simmer for about 30-40 minutes. Your soup is ready to serve.

If you prefer not to use ground beef for these recipes you can used chopped up beef of your liking. Just remember to to brown the meat before any of the other steps.

Remember, there are a large number of different cuts of beef - also premium types of beef, such as Aberdeen Angus - so if you are unsure of which cuts of beef to use, ask your butcher, they are usually all to happy to offer you advice. You can find loads of yummy beef recipes by searching on the internet - there are many recipe collection sites on the net, almost all of which will have a section for beef recipes. If they don’t have a specialist beef recipe section, you will most likely find beef recipes in the meat recipes section.
